Ingredients
1 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 tsp vanilla extract
2 ¼ cups all-purpose flour
½ tsp baking powder
½ tsp salt
1 cup cherry preserves (or cherry pie filling)
For the Lemon Glaze:
1 cup powdered sugar
2 tbsp fresh lemon juice
1 tsp lemon zest
Instructions
Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper for easy removal.
In a large bowl, cream butter and sugar until light and fluffy. Mix in eggs and vanilla.
Whisk together flour, baking powder, and salt. Gradually mix dry ingredients into wet until combined.
Spread two-thirds of the dough evenly in the prepared pan. Top with cherry preserves.
Dollop the remaining dough over the cherries, leaving some filling exposed.
Bake for 30–35 minutes, until golden brown and set. Cool completely.
In a small bowl, whisk together powdered sugar, lemon juice, and zest until smooth.
Drizzle lemon glaze over cooled bars, slice into squares, and enjoy.
