Instructions
Prepare the dough: In a bowl, combine flour and salt. Cut in chilled butter until mixture resembles coarse crumbs. Add ice water gradually until dough forms. Chill for 20–30 minutes.
Preheat oven: Preheat your oven to 400°F (200°C).
Prepare filling: In a separate bowl, toss blueberries with sugar, cornstarch, vanilla, and lemon zest.
Assemble galette: Roll out chilled dough into a rough circle on parchment paper. Spoon blueberry mixture into the center, leaving a 2-inch border. Fold the edges over the filling, pleating as necessary.
Add finishing touches: Brush the dough edges with egg wash and sprinkle coarse sugar on top.
Bake: Transfer to baking sheet and bake 35–40 minutes or until crust is golden and filling is bubbly.
Cool and serve: Allow to cool slightly before slicing. Serve warm or at room temperature.
