1 teaspoon pure vanilla extract
1 cup mixed berries (such as blueberries, raspberries, sliced strawberries)
1 small banana, sliced
¼ cup chopped nuts (such as almonds, pistachios, or walnuts)
2 tablespoons chia seeds or granola (optional)
Instructions
Prepare the Pan: Line a standard 9×13 inch baking sheet or pan with parchment paper, ensuring some paper hangs over the sides for easy removal. Lightly grease the parchment paper.
Mix the Base: In a large bowl, whisk together the Greek yogurt, honey (or maple syrup), and vanilla extract until smooth and well combined.
Assemble the Bark: Pour the yogurt mixture onto the prepared pan. Use a spatula to spread it into an even layer, about ¼ to ½ inch thick.
Add Toppings: Scatter the mixed berries, banana slices, chopped nuts, and any additional toppings (like chia seeds) evenly over the yogurt. Gently press the toppings down slightly so they adhere.
Freeze: Place the pan in the freezer and freeze for at least 4-6 hours, or until completely solid and firm.
Serve: Remove the pan from the freezer. Use the parchment paper to lift the entire sheet of frozen yogurt bark out of the pan. Break it into pieces by hand or cut it with a sharp knife. Serve immediately or store in an airtight container.
Notes
Yogurt Choice: For the creamiest, least-icy texture, use a very thick, full-fat Greek yogurt.
Toppings: Feel free to get creative with toppings! Dried fruit, dark chocolate chips, coconut flakes, or pepitas are all great additions.
Storage: Store any leftover bark in a sealed container or freezer bag in the freezer for up to 2 months.
