Ingredients
- Granulated sugar
- Unsalted butter
- Milk
- Unsweetened cocoa powder
- Creamy peanut butter
- Vanilla extract
- Quick-cooking oats
- Pinch of salt
Instructions
- Line a baking sheet with parchment paper and set aside.
- In a medium saucepan, combine sugar, butter, milk, and cocoa powder.
- Bring to a rolling boil over medium heat, then boil for 60–90 seconds.
- Remove from heat and stir in peanut butter, vanilla, and salt until smooth.
- Add oats and mix quickly until fully combined.
- Drop spoonfuls of the mixture onto the prepared baking sheet and let cool until set.
Notes
Use quick oats for the right texture; old-fashioned oats will make them more chewy and less cohesive.
Don’t over-boil — too long and they’ll turn dry, too short and they won’t set properly.
Add a pinch of flaky sea salt on top before they set for a fancy touch.
